Cacao-courgette paleo bread

This paleo bread is very popular with children and requires literally 5 mins prep time if using high speed blender.
“Paleo” simply means food without modern processed ingredients making it filled with wholefoods, high fibre, quality protein and fat, and gluten free. The cacao is raw organic cacao powder, not the processed ‘chocolate’. This real cacao was seen as sacred by ancient Maya, able to lift the spirit. It certainly offers an energy boost!
The bread is anti-inflammatory, antioxidant and immune boosting, a delicious mid day snack. Could be eaten with some honey for a slightly sweeter treat. 😊
Ingredients:
– 4 eggs, whisked
– 1 banana, mashed or just chunks dropped into blender.
– 2 medium courgettes, grated or cut into small chunks if you have a fast blender.
– 1 tbsp apple cider vinegar
– 1.5 cup ground walnuts into flour
– 1/2 cup tapioca flour
– 1/2 cup dessiccated coconut or coconut flour for more powdery texture
– a dash of vanilla
– 1 tbsp cinnamon powder
– 1/2 cup raw cacao
– 1 tsp bicarb soda
– pinch of salt
Method: Blend all ingredients until smooth then add
– 1/2 cup raisins. You can also add chopped prunes, dates and/or a cup of raspberries – add these after everything has been blended together.
Bake at 175C for 45 mins and Enjoy!
